Ingredients
6 Large Pasture-Raised Eggs
1 Pound Ground Sausage (Turkey or Pork)
1/2 Cup Almond Flour or GF Panko
1 Tablespoon Fresh Sage and Thyme
1 Teaspoon Smoked Paprika
Sea Salt & Black Pepper to Taste
Dijon Mustard for serving (optional)
Instructions
- Boil the Eggs: Place six eggs in a pot of boiling water for 6.5 to 9 minutes based on preference. Transfer to an ice bath
- Prepare the Meat Mixture: In a bowl, mix ground meat, herbs, smoked paprika, salt, and pepper. Divide into six portions
- Peel the Eggs: Carefully peel the eggs
- Wrap the Eggs: Flatten meat mixture, wrap around each egg
- Coat the Exterior: Dip each meat-covered egg in whisked egg, then coat with almond flour or gluten-free crumbs
- Air Fry to Perfection: Preheat air fryer to 375°F (190°C). Cook eggs for 12 to 15 minutes
- Rest and Serve: Let eggs rest for 3 to 5 minutes before slicing

For best results, use wet hands when handling the meat mixture to prevent sticking.
Ensure not to overcrowd the air fryer for optimal crispiness.
