Description

This BBQ Chicken Casserole brings the smokiness of a backyard grill right into your cozy kitchen. It combines tender chicken, sweet corn, and savory black beans in a rich, tangy sauce that every child in my house loves.


Ingredients

3 cups Cooked Chicken Breast
1.5 cups BBQ Sauce
8 ounces Whole Grain Pasta
1 can (15 oz) Black Beans
1 cup Sweet Cor
1 large Red Bell Pepper
1/2 medium Red Onio
2 cups Cheddar Cheese
1/4 cup Fresh Cilantro


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit and grease a 9×13 inch baking dish
  2. Boil the pasta in a large pot of salted water for two minutes less than the package instructions
  3. In a large mixing bowl, combine shredded chicken, black beans, sweet corn, diced red peppers, and red onions with BBQ sauce
  4. Drain the pasta and add it to the chicken mixture, folding gently
  5. Transfer the mixture to the prepared baking dish and spread evenly
  6. Sprinkle shredded cheddar cheese over the top
  7. Bake for 20 to 25 minutes until cheese bubbles and edges are golden brow
  8. Let it rest for five minutes, then garnish with fresh cilantro before serving

Notes

Using freshly shredded cheese improves texture compared to pre-shredded varieties.

Allowing the casserole to rest after baking helps the sauce to thicken.
