Ingredients
3 cups Cooked Chicken Breast
1.5 cups BBQ Sauce
8 ounces Whole Grain Pasta
1 can (15 oz) Black Beans
1 cup Sweet Cor
1 large Red Bell Pepper
1/2 medium Red Onio
2 cups Cheddar Cheese
1/4 cup Fresh Cilantro
Instructions
- Preheat your oven to 375 degrees Fahrenheit and grease a 9×13 inch baking dish
- Boil the pasta in a large pot of salted water for two minutes less than the package instructions
- In a large mixing bowl, combine shredded chicken, black beans, sweet corn, diced red peppers, and red onions with BBQ sauce
- Drain the pasta and add it to the chicken mixture, folding gently
- Transfer the mixture to the prepared baking dish and spread evenly
- Sprinkle shredded cheddar cheese over the top
- Bake for 20 to 25 minutes until cheese bubbles and edges are golden brow
- Let it rest for five minutes, then garnish with fresh cilantro before serving
