Description
These Beef Enchiladas are quick to prepare and deliver a punch of flavor with seasoned ground beef, cheese, and a rich enchilada sauce. Perfect for weeknight dinners!
Ingredients
1 lb Ground Beef (90% lean)
8–10 count Small Flour Tortillas
20 oz Red Enchilada Sauce
2 cups Shredded Cheese (Cheddar or Mexican Blend)
1/2 medium Diced Onio
1 tsp Garlic Powder
1 tbsp Chili Powder
1 tsp Cumi
Salt and Black Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish
- In a large skillet over medium-high heat, cook the ground beef and diced onions together. Drain any excess fat
- Stir in the garlic powder, chili powder, cumin, salt, and pepper. Pour in about 1/4 cup of the enchilada sauce to moisten the meat. Let it simmer for 2 minutes
- Warm your tortillas in the microwave for 20 seconds
- Lay a tortilla flat, add beef mixture and some cheese down the center, roll tightly and place seam-side down in the baking dish
- Repeat with remaining tortillas. Pour the rest of the enchilada sauce over the enchiladas and top with remaining cheese
- Bake for 15-20 minutes until bubbly and cheese is melted
- Let rest for 5 minutes before serving. Garnish with fresh cilantro or green onions
Notes
Leftover enchiladas can be stored in an airtight container for up to 3-4 days.
These are also freezer-friendly for up to 3 months.
