Description

This easy Beef Meximelt recipe recreates a nostalgic Taco Bell favorite at home. Warm flour tortillas are stuffed with seasoned beef, melty cheese, and salsa for a gooey, satisfying bite every time.


Ingredients

1 lb lean ground beef

1 packet taco seasoning

1/3 cup water

1/2 cup salsa (mild or medium)

1 1/2 cups shredded Mexican cheese blend

6 flour tortillas (soft taco size)

Optional: chopped green onions, sour cream, or jalapeños for topping


Instructions

1. Brown the ground beef in a skillet over medium heat until cooked through.

2. Drain fat, add taco seasoning and water, and simmer for 2–3 minutes.

3. Warm the tortillas in the microwave until soft.

4. Spoon beef into each tortilla, add cheese and salsa.

5. Fold tortillas and microwave each for 30 seconds until cheese melts.

6. Serve warm with optional toppings.

Notes

Make it spicier with hot salsa or pepper jack cheese. These freeze great—just wrap individually and reheat in the microwave or oven when ready to enjoy.
