Ingredients
1 large head Cauliflower, cut into bite-sized florets
1 cup All-Purpose Flour
1 tsp Garlic Powder
1 tsp Smoked Paprika
1 cup Milk (dairy or unsweetened plant-based)
1/2 cup Buffalo Hot Sauce
2 tbsp Melted Butter or Ghee
1/2 tsp Sea Salt
1/2 tsp Black Pepper
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper
- In a large mixing bowl, whisk together the flour, garlic powder, smoked paprika, salt, pepper, and milk until thick
- Toss the cauliflower florets in the batter to coat
- Arrange the coated florets in a single layer on the baking sheet and bake for 20 minutes, flipping halfway through
- While baking, mix the buffalo hot sauce and melted butter in a bowl
- Remove from the oven, brush the sauce over the florets, and return to bake for another 10 to 15 minutes
- For extra crispiness, broil for an additional 2 minutes but watch closely

For a thicker crust, dip florets in panko breadcrumbs after battering.
