1 large head Cauliflower, cut into bite-sized florets
1 cup All-Purpose Flour
1 tsp Garlic Powder
1 tsp Smoked Paprika
1 cup Milk (dairy or unsweetened plant-based)
1/2 cup Buffalo Hot Sauce
2 tbsp Melted Butter or Ghee
1/2 tsp Sea Salt
1/2 tsp Black Pepper


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper
  2. In a large mixing bowl, whisk together the flour, garlic powder, smoked paprika, salt, pepper, and milk until thick
  3. Toss the cauliflower florets in the batter to coat
  4. Arrange the coated florets in a single layer on the baking sheet and bake for 20 minutes, flipping halfway through
  5. While baking, mix the buffalo hot sauce and melted butter in a bowl
  6. Remove from the oven, brush the sauce over the florets, and return to bake for another 10 to 15 minutes
  7. For extra crispiness, broil for an additional 2 minutes but watch closely

Notes

Do not overcrowd the baking sheet to maintain crispiness.

Ensure cauliflower is dry after washing.

For a thicker crust, dip florets in panko breadcrumbs after battering.
