Description

2 lbs russet potatoes, cubed (no need to peel)1 (14 oz) package smoked sausage, sliced1 (1 oz) packet dry ranch seasoning mix2 cups shredded cheddar cheese3 tbsp olive oil1/2 cup diced yellow onion (optional)Salt and black pepper, to tasteFresh parsley or chives, for garnish


Instructions

1. Preheat oven to 400°F (200°C). Prepare potatoes, sausage, and onion.2. In a large bowl, toss potatoes and sausage with olive oil and ranch seasoning. Season with black pepper.3. Spread mixture on a large rimmed baking sheet. Bake for 25 minutes, stirring halfway.4. Sprinkle shredded cheddar cheese on top. Bake for another 10–15 minutes until melted and bubbly.5. Remove from oven, rest 2–3 minutes, garnish with parsley or chives, and serve.

Notes
