Ingredients
4 medium potatoes (peeled and diced)
1 tablespoon olive oil
1 packet taco seasoning
1 cup shredded cheddar cheese
½ cup sour cream (optional)
1 cup salsa (optional)
Fresh cilantro, chopped (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare the potatoes: wash and peel (optional), then dice them.
3. Toss the potatoes in olive oil and sprinkle taco seasoning. Toss until well-coated.
4. Spread the potatoes in a single layer on the baking sheet and roast for 30-35 minutes.
5. Once crispy, sprinkle shredded cheddar cheese over the potatoes and return to the oven for another 5 minutes.
6. Serve with sour cream, salsa, and fresh cilantro if desired.
Notes
For substitutions, try sweet potatoes instead of regular potatoes.
Use any cheese you prefer, such as Monterey Jack or pepper jack.
