1.5 lbs Chicken Breast or Thighs
8 cups Low-Sodium Chicken Broth
1 medium Yellow Onion, diced

3 stalks Celery Stalks, chopped
4 cloves Garlic, minced
1 tablespoon Fresh Thyme
1 tablespoon Fresh Rosemary
2 tablespoons Olive Oil
Sea Salt & Black Pepper, to taste


Instructions

  1. Heat the olive oil in a large Dutch oven or stockpot over medium heat until it shimmers
  2. Add the diced onions, carrots, and celery to the pot. Sauté these vegetables for about 6 to 8 minutes until the onions become translucent and the carrots soften slightly
  3. Stir in the minced garlic, fresh thyme, and rosemary. Cook for another 60 seconds until the aroma fills your kitche
  4. Place the chicken pieces into the pot and pour over the chicken broth. Ensure the liquid completely covers the meat
  5. Bring the liquid to a rolling boil, then immediately reduce the heat to a low simmer. Cover the pot and cook for 20 minutes, or until the chicken reaches an internal temperature of 165°F
  6. Remove the chicken from the pot and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces
  7. While the chicken rests, turn the heat back up to medium-high and add the whole wheat noodles to the simmering broth. Cook the noodles according to the package directions, usually about 7 to 9 minutes
  8. Return the shredded chicken to the pot and stir well to combine. Season your Chicken Noodle Soup with Whole Wheat Noodles with sea salt and black pepper
