Ingredients
7 ounces Fideo Noodles (Vermicelli), broken into 1-inch pieces
1 pound Chicken Breast or Thighs, diced into bite-sized cubes
1/2 pound Lean Ground Beef or Pork
2 tablespoons Olive Oil
3 large Roma Tomatoes, freshly blended
1/2 medium White Onion, finely chopped
3 cloves Garlic, minced or pressed
6 cups Chicken Broth, low sodium preferred
1 teaspoon Cumin, ground
Salt and Pepper, to taste
1/4 cup Fresh Cilantro, chopped for garnish
Instructions
- Heat one tablespoon of olive oil in a large pot over medium-high heat. Add the diced chicken and ground meat. Season with salt and pepper. Cook until the meat is browned and cooked through. Remove the meat from the pot and set it aside on a plate
- In the same pot, add the remaining tablespoon of oil. Toss in the fideo noodles. Stir constantly for 2 to 3 minutes until the noodles turn a deep golden brow
- Add the chopped onion and minced garlic to the toasted noodles. Sauté for another 2 minutes until the onion becomes translucent and fragrant
- Blend the fresh tomatoes with a half cup of water or broth until smooth. Pour this mixture into the pot with the noodles and onions
- Return the cooked chicken and meat to the pot. Pour in the remaining chicken broth and add the cumin. Stir well to combine
- Bring the Chicken Sopa De Fideo Con Carne to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 8 to 10 minutes
- Taste the soup and adjust the salt and pepper if necessary. Stir in the fresh cilantro just before serving
