1 cup Hot Brewed Coffee
1/2 cup Avocado Oil or Melted Coconut Oil
8 ounces 70% Dark Chocolate Solids
1 cup Heavy Cream (or Coconut Cream)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with oil and dust them with cocoa powder
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and baking powder, sifting the cocoa powder to remove lumps
  3. In a separate bowl, beat the eggs until light and frothy, then gradually whisk in buttermilk, oil, and vanilla extract
  4. Slowly add the dry ingredients to the wet mixture and pour in the hot coffee, stirring to combine into a thin batter
  5. Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes until a skewer comes out clean. Let cool completely
  6. Chop the dark chocolate and heat the cream until simmering. Pour cream over chocolate, let sit for five minutes, then stir until glossy
  7. Place one cake layer on a serving plate, spread ganache over top, place second layer on top, and pour remaining ganache over center, guiding it down the sides
