Soft, sweet, and loaded with cinnamon flavor, these Cinnamon Roll French Toast Bites are the perfect quick treat for any breakfast or brunch.
Ingredients
1 loaf brioche or challah bread, cubed
4 large eggs
¾ cup whole milk
¼ cup heavy cream
¼ cup granulated sugar
2 teaspoons vanilla extract
1 tablespoon ground cinnamon
¼ teaspoon salt
3 tablespoons melted butter
Powdered sugar for dusting
Cream cheese glaze: 4 oz cream cheese, 2 tbsp butter, ½ cup powdered sugar, 1 tsp vanilla, 2 tbsp milk
Instructions
1. Cut bread into cubes and set aside.
2. Whisk eggs, milk, cream, sugar, vanilla, cinnamon, and salt.
3. Fold in bread cubes gently and let soak 5 minutes.
4. Heat skillet over medium heat and brush with melted butter.
5. Add soaked cubes in batches, cooking 2-3 minutes per side.
6. Transfer to plate and dust with powdered sugar.
7. Optional: Drizzle cream cheese glaze before serving.
Notes
Use day-old bread for best texture.
Adjust sugar to taste for a less sweet version.
Bites can be frozen and reheated directly from frozen.
