1.5 cups Graham Cracker Crumbs
5 tablespoons Melted Unsalted Butter
2 tablespoons Granulated Sugar
32 ounces Full-Fat Cream Cheese (Softened)
1 cup Granulated Sugar
1 cup Sour Cream (Room Temp)
4 Large Eggs (Room Temp)
1 tablespoon Vanilla Extract
1 teaspoon Fresh Lemon Juice


Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan thoroughly with butter
  2. Combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter in a medium bowl. Press the mixture firmly into the bottom of the prepared pan and bake for 10 minutes. Let the crust cool completely
  3. In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar until smooth and fluffy
  4. Add the sour cream, vanilla extract, and lemon juice. Mix until combined, scraping down the sides of the bowl
  5. Add the eggs one at a time, mixing on low speed after each addition just until incorporated
  6. Wrap the outside of the springform pan in two layers of heavy-duty aluminum foil. Place the pan inside a larger roasting pan and fill with hot water until it reaches halfway up the sides of the cheesecake pa
  7. Bake the Classic Cheesecake for 60 to 70 minutes until the edges are set but the center jiggles slightly
  8. Turn off the oven and crack the door open slightly. Let the cheesecake sit inside for one hour
  9. Remove the pan from the water bath and let it cool to room temperature on a wire rack
  10. Refrigerate the cheesecake for at least 6 hours, or ideally overnight, before serving
