Description

A Classic Fruit Tart combines a crisp, golden crust with a velvety, nutrient-dense cream filling and a vibrant array of seasonal fruits, celebrating the natural sweetness of whole foods without relying on excessive refined sugars.


Ingredients

2 cups Super-fine Almond Flour
3 tablespoons Maple Syrup or Honey
1/4 cup Melted Coconut Oil
1/4 teaspoon Sea Salt
1.5 cups Greek Yogurt or Cashew Cream
1 teaspoon Vanilla Bean Paste
1 tablespoon Lemon Zest
2 cups Fresh Strawberries, Blueberries, Kiwi (Assorted)
2 tablespoons Apricot Preserves (Fruit-sweetened)


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch tart pan with a removable bottom
  2. In a medium glass bowl, combine the almond flour, melted coconut oil, maple syrup, and sea salt. Stir until a cohesive dough forms
  3. Transfer the dough to the tart pan and press it firmly into the bottom and up the sides using your fingers or the back of a spoo
  4. Place the pan in the oven and bake for 10 to 12 minutes until the edges turn a light golden brown. Remove and let it cool completely
  5. While the crust cools, whisk together the Greek yogurt (or cashew cream), vanilla bean paste, and lemon zest until smooth
  6. Once the crust reaches room temperature, spread the creamy filling evenly across the base of the Classic Fruit Tart
  7. Carefully place your sliced fruits in concentric circles, starting from the outside and working toward the center
  8. Warm the apricot preserves with a teaspoon of water, then lightly brush the fruit to give your Classic Fruit Tart a beautiful shine
  9. Refrigerate the tart for at least one hour before slicing to allow the filling to firm up perfectly
