Classic Greek Salad is a refreshing dish that features a mix of raw vegetables, kalamata olives, and feta cheese, all dressed with a zingy lemon and olive oil dressing. It's a perfect side for various main courses, especially during warm summer evenings.
Ingredients
1 Large English Cucumber
4 Large Roma or Vine Tomatoes
1/2 Medium Red Onio
1 Medium Green Bell Pepper
1/2 Cup Kalamata Olives
7 Ounces Greek Feta Cheese
1/4 Cup Extra Virgin Olive Oil
2 Tablespoons Red Wine Vinegar
1 Teaspoon Dried Oregano
Sea Salt & Black Pepper to taste
Instructions
- Prepare the vegetables by washing and slicing the cucumber into half-moons, cutting the tomatoes into wedges, and slicing the red onion very thi
- Combine sliced cucumbers, tomatoes, red onions, and green bell peppers in a large bowl
- Add the whole kalamata olives to the vegetable mixture and toss gently to mix
- In a small jar, whisk together the olive oil, red wine vinegar, half of the oregano, salt, and pepper
- Drizzle the dressing over the salad and toss to coat all ingredients
- Place the block or cubes of feta cheese on top of the salad and sprinkle with the remaining oregano
- Serve immediately
Notes
For added protein, consider adding a cup of chickpeas.
Substitute red onion with shallots for a milder flavor.
Serve with crusty bread to enjoy the salad juice.
