Ingredients

3 lbs Yukon Gold Potatoes
1 cup Real Mayonnaise
2 tbsp Yellow Mustard
1 tbsp Apple Cider Vinegar
3 stalks Celery Stalks
1/2 small Red Onio
4 large Hard-boiled Eggs
Sea Salt & Black Pepper to taste
1/2 tsp Smoked Paprika
Instructions
- Boil the Potatoes: Clean and dice potatoes into 1-inch cubes. Place in a large pot of cold, heavily salted water. Bring to a boil and cook for about 8 to 10 minutes until fork-tender
- Prep the Mix-ins: While potatoes boil, finely chop celery and red onion. Peel and dice hard-boiled eggs
- Whisk the Dressing: In a small bowl, combine mayonnaise, mustard, apple cider vinegar, salt, and pepper
- Drain and Steam: Once potatoes are done, drain in a colander and let sit for 2-3 minutes to allow steam to escape
- Combine: While potatoes are slightly warm, toss gently with the dressing
- Chill: Fold in celery, onions, and eggs. Sprinkle with smoked paprika. Chill in the refrigerator for at least one hour before serving
