Ingredients
1.5 lbs boneless, skinless chicken thighs
1 (13.5 oz) can full-fat coconut milk
Juice and zest of 2 limes
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp coconut oil or avocado oil
1 tbsp soy sauce or coconut aminos
1 tsp honey or maple syrup
Salt and black pepper to taste
Fresh cilantro or sliced green onions for garnish
Instructions
1. Pat chicken thighs dry and season with salt and pepper.
2. Heat oil in a large skillet over medium-high heat. Sear chicken 5-6 minutes per side until golden brown, then remove and set aside.
3. Reduce heat to medium. Add garlic and ginger, sauté 1 minute until fragrant.
4. Pour in coconut milk, lime juice, lime zest, soy sauce, and honey. Scrape browned bits from skillet and bring to simmer.
5. Return chicken to skillet with juices. Simmer 8-10 minutes until chicken reaches 165°F.
6. Garnish with cilantro or green onions and serve hot over rice.
Notes
Use chicken thighs for the best flavor and texture.
For a lighter dish, substitute light coconut milk.
Add red curry paste or chili for extra heat.
