Ingredients
100g Active Sourdough Starter
350g Warm Water (filtered)
500g Bread Flour
10g Sea Salt
125g Dried Cranberries
2 Tablespoons Fresh Orange Zest
20g Honey or Maple Syrup
Instructions
- In a large glass bowl, whisk together your active starter, warm water, and honey until the starter dissolves. Add the bread flour and sea salt. Mix by hand or with a sturdy dough whisk until a shaggy ball forms and no dry flour remains. Cover and rest for 30 minutes
- Perform your first set of 'stretch and folds'. Grab one side of the dough, pull it upward, and fold it over the center. Rotate the bowl and repeat this four times
- During the second set of folds (30 minutes later), evenly sprinkle the dried cranberries and fresh orange zest over the dough. Fold the dough over the inclusions to trap them inside
- Let the dough sit in a warm spot (about 70-75°F) until it increases in volume by about 50-75%, which usually takes 4 to 6 hours
- Gently tip the dough onto a lightly floured surface. Fold the edges toward the center to create tension. Then flip it over and shape it into a tight round or oval
- Place the shaped loaf into a floured banneton or a bowl lined with a lint-free tea towel. Cover it and place it in the refrigerator for 12 to 24 hours
- Preheat your oven to 450°F (230°C) with a Dutch oven inside. Carefully flip the cold dough onto a piece of parchment paper. Score the top with a sharp blade and lower it into the hot Dutch oven, cover, and bake for 20 minutes
- Remove the lid and continue baking for another 15 to 20 minutes until deep golden brown and sounds hollow when tapped on the bottom
- Allow the loaf to cool completely on a wire rack for at least 2 hours before slicing
Notes
Soak dried cranberries in warm water if they are very hard before adding to dough.
Use a microplane to zest oranges, avoiding the bitter pith.
