1/2 cup Sun-dried Tomatoes (in oil)
4 cloves Fresh Garlic (minced)
1 cup Full-fat Coconut Milk or Grass-fed Cream
1/2 cup Chicken Bone Broth
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
Sea Salt and Black Pepper to taste


Instructions

  1. Season organic chicken breasts with sea salt, black pepper, and dried oregano
  2. Heat extra virgin olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes per side until golden brown and fully cooked. Remove and let rest
  3. In the same skillet, lower heat and add minced garlic and sliced sun-dried tomatoes, sautéing for about two minutes
  4. Pour in chicken bone broth and cream or coconut milk, scraping up brown bits from the pa
  5. Bring to a gentle simmer and let the sauce reduce slightly for about 3-5 minutes
  6. Add fresh baby spinach, stirring for 1-2 minutes until wilted
  7. Return the chicken to the skillet, spooning sauce over it and heat through for one more minute

Notes

Use either coconut milk for a dairy-free version or grass-fed cream for a traditional creaminess.
