Ingredients
1.5 lbs Sea Scallops
2 tablespoons Grass-fed Butter
1 tablespoon Olive Oil
4 cloves Fresh Garlic
1/2 cup Sun-dried Tomatoes
3 cups Baby Spinach
1 cup Heavy Cream
1/2 cup Parmesan Cheese
1/4 cup Fresh Basil
Instructions
- Prepare the scallops by removing the side muscle if necessary. Pat dry and season with salt and pepper
- Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat and sear the scallops for 2 minutes per side until golden brow
- Remove scallops and set aside. Add remaining butter, garlic, and sun-dried tomatoes to the skillet and sauté for 1 minute
- Pour in heavy cream, bring to a simmer, and stir in parmesan cheese until melted and the sauce thickens
- Add the baby spinach and stir until wilted
- Return seared scallops to the pan, spoon sauce over, and garnish with fresh basil before serving
Notes
Ensure scallops are very dry for proper searing.
Do not overcrowd the pan; work in batches if necessary.
