Description

Creamy Tuscan Scallops bring the flavors of Italy straight to your kitchen table with minimal effort. The combination of perfectly seared, buttery scallops nestled in a rich sauce of garlic, sun-dried tomatoes, and fresh spinach is a crowd-pleaser that is both nourishing and sophisticated.


Ingredients

1.5 lbs Sea Scallops
2 tablespoons Grass-fed Butter
1 tablespoon Olive Oil
4 cloves Fresh Garlic
1/2 cup Sun-dried Tomatoes
3 cups Baby Spinach
1 cup Heavy Cream
1/2 cup Parmesan Cheese
1/4 cup Fresh Basil


Instructions

  1. Prepare the scallops by removing the side muscle if necessary. Pat dry and season with salt and pepper
  2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat and sear the scallops for 2 minutes per side until golden brow
  3. Remove scallops and set aside. Add remaining butter, garlic, and sun-dried tomatoes to the skillet and sauté for 1 minute
  4. Pour in heavy cream, bring to a simmer, and stir in parmesan cheese until melted and the sauce thickens
  5. Add the baby spinach and stir until wilted
  6. Return seared scallops to the pan, spoon sauce over, and garnish with fresh basil before serving

Notes

Ensure scallops are very dry for proper searing.

Do not overcrowd the pan; work in batches if necessary.
