Ingredients
7–8 lbs Spiral Sliced Ham
20 oz Pineapple Slices or Chunks
1 cup Coconut Sugar or Dark Brown Sugar
1/2 cup Pineapple Juice
1/4 cup Raw Honey or Maple Syrup
1/2 tsp Ground Cloves
1 tbsp Dijon Mustard
Instructions
- Lightly coat the interior of your slow cooker with avocado oil or use a liner for easy cleanup. Place the ham inside, ensuring the flat side sits firmly on the bottom
- In a small glass bowl, whisk together the sugar, honey, Dijon mustard, and ground cloves
- Tuck the pineapple slices between the ham layers and scatter the remaining pieces around the sides
- Pour the pineapple juice over the meat, then rub the sugar mixture across the top and sides
- Cover the pot and cook on low for 4 to 5 hours. Avoid using the high setting
- Halfway through the cooking process, baste the ham with accumulated juices
- Once the internal temperature reaches 140°F, remove the ham and let it rest for 15 minutes before carving
