Ingredients
2 lbs Chicken Thighs
15 oz Tomato Puree
3 tbsp Ghee or Butter
1 cup Full-Fat Coconut Milk
1 medium Yellow Onio
2 tbsp Ginger-Garlic Paste
2 tsp Garam Masala
1 tsp Turmeric Powder
1 tsp Ground Cumi
1 tsp Kashmiri Red Chili Powder
Instructions
- Finely dice the onion and prepare the ginger-garlic paste. In a small bowl, whisk together the tomato puree, garam masala, turmeric, cumin, and chili powder
- Place the bite-sized chicken pieces into the bottom of the slow cooker. Pour the spiced tomato mixture over the chicken, adding the diced onions and ghee (or butter) on top
- Cover the crockpot and set it to LOW for 4 to 5 hours
- About 30 minutes before serving, stir in the coconut milk or heavy cream. Taste and add sea salt as needed
- Once the cooking time is done, stir the Crockpot Butter Chicken vigorously to break up any large pieces of onion and garnish with fresh cilantro and a squeeze of lime juice
Notes
For a thick sauce, allow the lid to remain off for the last 30 minutes of cooking.
Use chicken thighs for best results in slow cooking.
