Description

This Crockpot Butter Chicken is a delicious and authentic Indian dish that transforms your kitchen into a global culinary destination. With rich, velvety textures and a complex symphony of spices, it delivers explosive flavors with minimal effort using a slow cooker.


Ingredients

2 lbs Chicken Thighs
15 oz Tomato Puree
3 tbsp Ghee or Butter
1 cup Full-Fat Coconut Milk
1 medium Yellow Onio
2 tbsp Ginger-Garlic Paste
2 tsp Garam Masala
1 tsp Turmeric Powder
1 tsp Ground Cumi
1 tsp Kashmiri Red Chili Powder


Instructions

  1. Finely dice the onion and prepare the ginger-garlic paste. In a small bowl, whisk together the tomato puree, garam masala, turmeric, cumin, and chili powder
  2. Place the bite-sized chicken pieces into the bottom of the slow cooker. Pour the spiced tomato mixture over the chicken, adding the diced onions and ghee (or butter) on top
  3. Cover the crockpot and set it to LOW for 4 to 5 hours
  4. About 30 minutes before serving, stir in the coconut milk or heavy cream. Taste and add sea salt as needed
  5. Once the cooking time is done, stir the Crockpot Butter Chicken vigorously to break up any large pieces of onion and garnish with fresh cilantro and a squeeze of lime juice

Notes

For a thick sauce, allow the lid to remain off for the last 30 minutes of cooking.

Use chicken thighs for best results in slow cooking.
