Description

Crockpot Kielbasa and Green Beans is an effortless, one-pot meal featuring smoky kielbasa and tender green beans. Minimal prep, maximum flavor, perfect for busy weeknights or meal prep.


Ingredients

Scale

1 (14-16 oz) ring kielbasa or smoked sausage, sliced ½-inch rounds

1.5 lbs fresh green beans, ends trimmed

1 medium yellow onion, thinly sliced

3 cloves garlic, minced

1 cup chicken broth (low sodium)

1 tablespoon olive oil

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)


Instructions

1. Slice kielbasa, trim green beans, chop onion and garlic.

2. Optional: Brown kielbasa in olive oil for 2-3 minutes per side.

3. Place green beans and onion in crock pot; scatter garlic over top. Pour in chicken broth, add pepper and red pepper flakes.

4. Place kielbasa on top without stirring.

5. Cover and cook on HIGH 3-4 hours or LOW 5-6 hours until green beans are tender.

6. Stir before serving.

Notes

Do not use canned green beans; they become mushy.

Check green beans at minimum cook time to avoid overcooking.

Allow kielbasa to sit on top first half of cooking to infuse flavor.

Season veggies with pepper and optional red pepper flakes.

Protein alternatives: Italian sausage, chicken apple sausage, diced ham, smoked turkey sausage.

Add veggies: bell peppers, mushrooms, or potatoes (potatoes added with green beans).

Optional flavor boosters: Dijon mustard, apple cider vinegar, brown sugar.

Low-carb: increase green beans and use turkey/chicken kielbasa.
