150g Active Sourdough Starter
500g High-Protein Bread Flour
250g Unsalted European Butter (Softened)
150g Large Egg Yolks
150g Granulated Sugar
2 tbsp Honey
2 tbsp Vanilla
2 tbsp Orange Zest
200g Golden Raisins and Candied Citro
180g Filtered Water
Instructions
- Prepare the Levain: Triple-refresh your sourdough starter over 24 hours before starting the main dough
- The First Dough: Combine the active starter, water, sugar, half of the egg yolks, and the bread flour. Mix until a rough dough forms. Gradually add remaining yolks and mix until smooth
- First Fermentation: Let the dough rise in a warm environment until it triples in volume (10-12 hours)
- The Second Dough: Degas the first dough, add more sugar, honey, and vanilla. Incorporate softened butter gradually
- Incorporate Mix-ins: Gently fold in soaked raisins and candied peel
- Shaping and Final Proof: Divide dough into molds and let rise until it reaches the brim (6-12 hours)
- Baking: Score the top and bake at 340°F until the internal temperature reaches 201°F
- The Inversion: Hang the bread upside down to cool
