Ingredients
4 boneless, skinless chicken breasts
2 tbsp olive oil (plus more for cooking)
1 tsp Italian seasoning
Salt and black pepper, to taste
For the Bruschetta Topping:
4–5 medium ripe tomatoes, diced
1/4 cup fresh basil, chopped
2 cloves garlic, minced
1 tbsp balsamic vinegar
2 tbsp olive oil
Salt, to taste
Optional Garnish:
Shaved Parmesan cheese
Balsamic glaze
Instructions
1. In a medium bowl, combine diced tomatoes, basil, garlic, 2 tbsp olive oil, balsamic vinegar, and a pinch of salt. Stir and set aside.
2. Place chicken breasts between plastic wrap and pound to even thickness. Season with Italian seasoning, salt, and pepper.
3. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Cook chicken 5–7 minutes per side, until internal temperature reaches 165°F (74°C).
4. Remove chicken and let rest 3–5 minutes.
5. Spoon bruschetta topping over chicken. Garnish with Parmesan or balsamic glaze if desired. Serve immediately.
Notes
Pound chicken for even cooking and juicier results.
Use ripe, sweet tomatoes for the best flavor.
Make topping just before serving to avoid excess liquid.
Store chicken and topping separately in the fridge.
