Description

This Firecracker Chicken Stir Fry features a spicy sauce that clings to tender chicken and crisp vegetables, offering a perfect balance of sweet heat and savory goodness. It is a quick, wholesome, nourishing meal that is ready in under 30 minutes.


Ingredients

1.5 lbs Chicken Breast or Thighs, cut into bite-sized pieces
2 Bell Peppers (any color)
1 Red Onio
1 cup Snap Peas
1/3 cup Buffalo Sauce or Sriracha
1/4 cup Honey
1 tbsp Soy Sauce
3 cloves Garlic, minced
1 tbsp Fresh Ginger, grated
2 tbsp Avocado Oil
1 tsp Cornstarch mixed with 1 tsp water
Green Onions
Sesame Seeds


Instructions

  1. In a small bowl, combine the buffalo sauce, honey, soy sauce, and the cornstarch slurry. Stir until smooth and set aside
  2. Heat one tablespoon of oil in a large wok or skillet over high heat. Add the chicken pieces in a single layer and sear until golden brown and cooked through, then remove from the pa
  3. Add the remaining oil to the pan. Toss in the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant
  4. Add the peppers, onions, and snap peas to the skillet. Stir-fry for 3-4 minutes until bright and slightly crisp
  5. Return the cooked chicken to the pan and pour the firecracker sauce over the mixture
  6. Stir everything together constantly for 1-2 minutes until the sauce bubbles and thickens into a glossy glaze
  7. Remove the pan from heat and garnish with sliced green onions and sesame seeds before serving

Notes

Use high heat for a proper sear on the chicken.

You can substitute honey with maple syrup for a lower-sugar option.

For gluten-free, replace soy sauce with tamari or coconut aminos.
