Ingredients
1.5 lbs Chicken Breast or Thighs, cut into bite-sized pieces
2 Bell Peppers (any color)
1 Red Onio
1 cup Snap Peas
1/3 cup Buffalo Sauce or Sriracha
1/4 cup Honey
1 tbsp Soy Sauce
3 cloves Garlic, minced
1 tbsp Fresh Ginger, grated
2 tbsp Avocado Oil
1 tsp Cornstarch mixed with 1 tsp water

Instructions
- In a small bowl, combine the buffalo sauce, honey, soy sauce, and the cornstarch slurry. Stir until smooth and set aside
- Heat one tablespoon of oil in a large wok or skillet over high heat. Add the chicken pieces in a single layer and sear until golden brown and cooked through, then remove from the pa
- Add the remaining oil to the pan. Toss in the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant
- Add the peppers, onions, and snap peas to the skillet. Stir-fry for 3-4 minutes until bright and slightly crisp
- Return the cooked chicken to the pan and pour the firecracker sauce over the mixture
- Stir everything together constantly for 1-2 minutes until the sauce bubbles and thickens into a glossy glaze
- Remove the pan from heat and garnish with sliced green onions and sesame seeds before serving
Notes
Use high heat for a proper sear on the chicken.
You can substitute honey with maple syrup for a lower-sugar option.
For gluten-free, replace soy sauce with tamari or coconut aminos.
