Instructions
- In a large glass bowl, combine the warm filtered water and the active dry yeast. Let it sit for about 5 to 10 minutes until it becomes foamy
- Gradually add the organic bread flour and sea salt to the water. Mix until a shaggy dough forms
- Cover the bowl with a damp cloth and let the dough rest for 20 minutes
- Knead the dough on a lightly floured surface for about 8 to 10 minutes until it's smooth and elastic
- Place the kneaded dough in a lightly oiled bowl, cover it, and let it rise in a warm spot for 1.5 to 2 hours until doubled in size
- Gently deflate the dough and divide it into three equal portions. Shape each into a long, thin cylinder
- Place the shaped loaves on a floured couche or parchment-lined baking sheet. Let them rise for another 45 to 60 minutes
- Preheat your oven to 475°F (245°C) and place an empty cast-iron skillet on the bottom rack
- Score the tops of the loaves with a sharp blade, then slide them into the oven and pour hot water into the skillet
- Bake for 20 to 25 minutes until the crust is golden brown and sounds hollow when tapped
