350 milliliters Filtered Water
7 grams Active Dry Yeast

Instructions

  1. In a large glass bowl, combine the warm filtered water and the active dry yeast. Let it sit for about 5 to 10 minutes until it becomes foamy
  2. Gradually add the organic bread flour and sea salt to the water. Mix until a shaggy dough forms
  3. Cover the bowl with a damp cloth and let the dough rest for 20 minutes
  4. Knead the dough on a lightly floured surface for about 8 to 10 minutes until it's smooth and elastic
  5. Place the kneaded dough in a lightly oiled bowl, cover it, and let it rise in a warm spot for 1.5 to 2 hours until doubled in size
  6. Gently deflate the dough and divide it into three equal portions. Shape each into a long, thin cylinder
  7. Place the shaped loaves on a floured couche or parchment-lined baking sheet. Let them rise for another 45 to 60 minutes
  8. Preheat your oven to 475°F (245°C) and place an empty cast-iron skillet on the bottom rack
  9. Score the tops of the loaves with a sharp blade, then slide them into the oven and pour hot water into the skillet
  10. Bake for 20 to 25 minutes until the crust is golden brown and sounds hollow when tapped
