Description

Ingredients

1 cup uncooked long-grain white rice

1 can (10.5 oz) condensed French onion soup

1 cup beef broth

2 boneless, skinless chicken breasts

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup crispy French-fried onions (optional)

Salt and pepper to taste

Chopped parsley for garnish


Instructions

1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.

2. Mix rice, French onion soup, and beef broth in a bowl.

3. Pour mixture into the baking dish.

4. Season chicken with salt and pepper. Lay on top of rice.

5. Sprinkle mozzarella and Parmesan cheese over everything.

6. Cover tightly with foil. Bake for 60 minutes.

7. Uncover and top with fried onions if using.

8. Bake uncovered for 10–15 minutes more.

9. Ensure chicken is cooked through and rice is tender.

10. Let rest 5–10 minutes. Garnish with parsley and serve.
