6–8 large cloves Fresh Garlic
1 medium Yellow Onio
4 cups Vegetable or Chicken Bone Broth
1/2 cup Full-Fat Coconut Milk or Cashew Cream
2 teaspoons Fresh Thyme (leaves only)
2 tablespoons Extra Virgin Olive Oil
Sea Salt and Black Pepper to taste
Instructions
- Finely dice the yellow onion and mince the fresh garlic cloves. Let the garlic sit for a few minutes
- Heat the extra virgin olive oil in a large pot over medium-high heat. Sauté the sliced mushrooms in batches until browned
- Once the mushrooms are golden brown, add the onions and cook until translucent. Stir in the minced garlic and fresh thyme, sauté for another two minutes
- Pour in the broth and scrape the bottom of the pot. Bring to a gentle boil, then reduce the heat and let it simmer for 15-20 minutes
