4 to 6 chops Lamb Rib or Loin Chops
3 sprigs Fresh Rosemary (minced)
4 cloves Fresh Garlic (crushed)
2 tablespoons Avocado Oil
1 teaspoon Sea Salt
1/2 teaspoon Black Pepper
1 tablespoon Unsalted Butter


Instructions

  1. Remove the lamb chops from the refrigerator 15 minutes before cooking. Pat them completely dry with paper towels
  2. Mix the minced rosemary, crushed garlic, salt, pepper, and one tablespoon of oil in a small bowl. Rub this mixture onto both sides of the lamb chops
  3. Place a heavy cast-iron skillet over high heat. Add the remaining tablespoon of oil and wait until the oil is shimmering
  4. Carefully place the lamb chops in the hot skillet and sear the first side for 3 to 4 minutes without moving them
  5. Turn the chops over, add the tablespoon of butter, and baste the hot butter over the meat. Cook for another 3 minutes for medium-rare
  6. Remove the chops and let them rest for at least 5 minutes
