Ingredients
4 to 6 chops Lamb Rib or Loin Chops
3 sprigs Fresh Rosemary (minced)
4 cloves Fresh Garlic (crushed)
2 tablespoons Avocado Oil
1 teaspoon Sea Salt
1/2 teaspoon Black Pepper
1 tablespoon Unsalted Butter
Instructions
- Remove the lamb chops from the refrigerator 15 minutes before cooking. Pat them completely dry with paper towels
- Mix the minced rosemary, crushed garlic, salt, pepper, and one tablespoon of oil in a small bowl. Rub this mixture onto both sides of the lamb chops
- Place a heavy cast-iron skillet over high heat. Add the remaining tablespoon of oil and wait until the oil is shimmering
- Carefully place the lamb chops in the hot skillet and sear the first side for 3 to 4 minutes without moving them
- Turn the chops over, add the tablespoon of butter, and baste the hot butter over the meat. Cook for another 3 minutes for medium-rare
- Remove the chops and let them rest for at least 5 minutes
