Description

Crispy seared steak bites with golden, fluffy baby potatoes, coated in a buttery garlic sauce and garnished with fresh parsley. A one-pan, protein-packed dinner perfect for weeknights or entertaining.


Ingredients

1.5 lbs sirloin steak, cut into 1-inch cubes1.5 lbs baby potatoes, halved or quartered6 cloves garlic, minced3 tbsp olive oil2 tbsp butter1 tsp paprikaSalt and black pepper, to tasteFresh parsley, chopped (for garnish)


Instructions

1. Cut the steak into 1-inch cubes, halve potatoes, and mince garlic.2. Boil potatoes in salted water for 10 minutes until just fork-tender. Drain.3. Heat 2 tbsp olive oil over high heat. Pat steak dry, season with salt, pepper, paprika. Sear 2-3 mins per side, then remove.4. Add remaining 1 tbsp olive oil to skillet. Cook potatoes 4-5 mins undisturbed until golden and crispy. Season with salt and pepper.5. Reduce heat to medium. Add steak back to skillet with potatoes. Toss together.6. Add butter and minced garlic. Cook 1-2 minutes, stirring constantly until fragrant.7. Remove from heat. Stir in fresh parsley. Serve immediately.

Notes

Cool completely before storing. Store in an airtight container in the fridge up to 3 days. Reheat in skillet over medium heat to preserve crispness. Microwave works in a pinch but will sacrifice texture.
