Ghost Fruit Skewers are a fun, healthy, and eye-catching snack. Fresh fruit is coated in creamy coconut and rolled in desiccated coconut for a ghostly look. Perfect for parties, Halloween, or a refreshing treat.
Ingredients
2 cups mixed firm fruits (watermelon balls, strawberries, pineapple chunks, grapes)
1 cup full-fat coconut cream, chilled
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1/2 cup desiccated coconut, for coating
Bamboo or metal skewers
Parchment paper
Instructions
1. Wash and thoroughly dry all fruit to ensure coating sticks.
2. Thread fruit onto skewers in any desired pattern.
3. In a medium bowl, whisk chilled coconut cream, honey, and vanilla until smooth.
4. Spread desiccated coconut on a shallow plate.
5. Coat each fruit skewer with the coconut cream mixture using a spoon or spatula.
6. Roll coated skewers in desiccated coconut until fully covered, then place on a parchment-lined tray.
7. Repeat with remaining skewers.
8. Freeze skewers for 15–20 minutes to set before serving.
Notes
Best enjoyed fresh within 24 hours.
If storing, place skewers in a single layer in an airtight container in the fridge.
Do not freeze long-term, as fruit will become icy and lose texture.
Ensure fruit is fully dry and coconut cream is chilled for best results.
