Description

Ingredients

12 oz Dried Whole Grain or Chickpea Penne
1 large English Cucumber, diced
1 pint Cherry Tomatoes, halved
1 medium Red Bell Pepper, chopped
1/2 cup Red Onion, finely slivered
1/4 cup Fresh Parsley, chopped
1/4 cup Fresh Oregano, chopped
1/2 cup Kalamata Olives, pitted and sliced
1/2 cup Feta Cheese, crumbled
1/3 cup Extra Virgin Olive Oil
3 tablespoons Fresh Lemon Juice
2 cloves Garlic, minced


Instructions

  1. Cook the pasta in boiling salted water until al dente. Drain and rinse with cold water
  2. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl
  3. Chop the vegetables into bite-sized pieces
  4. Combine the cooled pasta, vegetables, olives, and herbs in a large bowl
  5. Pour the dressing over and toss gently. Add crumbled feta and fold it i
  6. Chill for at least 30 minutes before serving
