1 Whole Turkey 12-14 lbs
1/2 cup Extra Virgin Olive Oil
3 tablespoons Fresh Rosemary, finely chopped
3 tablespoons Fresh Thyme, leaves stripped
2 tablespoons Fresh Sage, minced
68 cloves Garlic, minced or pressed
2 tablespoons Kosher Salt
1 tablespoon Black Pepper, freshly cracked
1 large Lemon, halved
1 medium Yellow Onion, quartered


Instructions

  1. Preheat the oven to 325°F (165°C). Remove the turkey from the refrigerator 30 minutes before cooking
  2. Pat the entire turkey dry with paper towels, including the cavity
  3. In a small bowl, mix olive oil, rosemary, thyme, sage, garlic, salt, and pepper to form a thick paste
  4. Stuff the lemon halves and onion quarters into the turkey cavity. Rub some of the herb mixture onto the meat under the skin and the rest over the exterior
  5. Place the turkey on a rack in a roasting pan and roast until a thermometer reads 165°F (74°C), about 13-15 minutes per pound
  6. Remove the turkey from the oven, tent with foil, and let it rest for at least 30 minutes before carving

Notes

For a quicker cooking option, apply the herb mixture to a bone-in turkey breast.

If using frozen turkey, ensure it is completely thawed before starting.
