Ingredients
1 Whole Turkey 12-14 lbs
1/2 cup Extra Virgin Olive Oil
3 tablespoons Fresh Rosemary, finely chopped
3 tablespoons Fresh Thyme, leaves stripped
2 tablespoons Fresh Sage, minced
6–8 cloves Garlic, minced or pressed
2 tablespoons Kosher Salt
1 tablespoon Black Pepper, freshly cracked
1 large Lemon, halved
1 medium Yellow Onion, quartered
Instructions
- Preheat the oven to 325°F (165°C). Remove the turkey from the refrigerator 30 minutes before cooking
- Pat the entire turkey dry with paper towels, including the cavity
- In a small bowl, mix olive oil, rosemary, thyme, sage, garlic, salt, and pepper to form a thick paste
- Stuff the lemon halves and onion quarters into the turkey cavity. Rub some of the herb mixture onto the meat under the skin and the rest over the exterior
- Place the turkey on a rack in a roasting pan and roast until a thermometer reads 165°F (74°C), about 13-15 minutes per pound
- Remove the turkey from the oven, tent with foil, and let it rest for at least 30 minutes before carving

For a quicker cooking option, apply the herb mixture to a bone-in turkey breast.
If using frozen turkey, ensure it is completely thawed before starting.
