3 lbs Yellow Onions, sliced thi
4 tablespoons Unsalted Butter

1/2 cup Dry Sherry or White Wine
1 tablespoon Worcestershire Sauce
3 sprigs Fresh Thyme
2 Bay Leaves
1.5 cups Gruyère Cheese, shredded
1 loaf French Baguette, sliced

- Pressure Cook: Secure the lid and set the valve to 'Sealing.' Select 'Manual' or 'Pressure Cook' on high for 5 minutes
- Natural Release: Allow for a 10-minute natural pressure release after the cooking time
- Toast the Bread: Slice the baguette and toast it under the broiler until golden brow
- Broil and Serve: Discard the thyme sprigs and bay leaves. Ladle the soup into oven-safe bowls. Top with a slice of bread and a handful of Gruyère cheese. Place under the broiler for 2-3 minutes until the cheese is bubbly and browned
Notes
For a vegetarian version, use mushroom broth instead of beef broth.
If you don't have Gruyère, substitutes like Swiss or Provolone can be used.
