Description

This Instant Pot French Onion Soup provides that classic, high-end bistro taste in a fraction of the time. It features rich beef broth, silky onions, and gooey melted cheese, making it the ultimate comfort food for a busy weeknight.

3 lbs Yellow Onions, sliced thi
4 tablespoons Unsalted Butter
6 cups Beef Bone Broth
1/2 cup Dry Sherry or White Wine
1 tablespoon Worcestershire Sauce
3 sprigs Fresh Thyme
2 Bay Leaves
1.5 cups Gruyère Cheese, shredded
1 loaf French Baguette, sliced


Instructions

  1. Sauté the Onions: Turn your Instant Pot to the 'Sauté' setting and melt the butter. Add the sliced onions and cook for about 10 to 12 minutes, stirring occasionally, until they start to soften and turn golden brow
  2. Deglaze the Pot: Pour in the sherry or white wine. Use a wooden spoon to scrape all the brown bits (the fond) off the bottom of the pot
  3. Add Liquids and Aromatics: Stir in the beef broth, Worcestershire sauce, thyme sprigs, and bay leaves. Ensure everything is well combined and the onions are submerged
  4. Pressure Cook: Secure the lid and set the valve to 'Sealing.' Select 'Manual' or 'Pressure Cook' on high for 5 minutes
  5. Natural Release: Allow for a 10-minute natural pressure release after the cooking time
  6. Toast the Bread: Slice the baguette and toast it under the broiler until golden brow
  7. Broil and Serve: Discard the thyme sprigs and bay leaves. Ladle the soup into oven-safe bowls. Top with a slice of bread and a handful of Gruyère cheese. Place under the broiler for 2-3 minutes until the cheese is bubbly and browned

Notes

For a vegetarian version, use mushroom broth instead of beef broth.

If you don't have Gruyère, substitutes like Swiss or Provolone can be used.
