Ingredients
8 bone-in chicken drumsticks, skin on
½ cup low-sodium soy sauce
3 tablespoons honey
2 tablespoons brown sugar
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon gochujang (Korean chili paste)
4 garlic cloves, minced
1 teaspoon fresh ginger, grated
1 tablespoon toasted sesame seeds (for garnish)
2 green onions, sliced (for garnish)
Instructions
1. In a medium bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, sesame oil, gochujang, garlic, and ginger.
2. Place chicken drumsticks in a large zip-top bag or shallow dish and pour marinade over. Seal and refrigerate for at least 2 hours or overnight.
3. Preheat oven to 400°F (or heat grill to medium-high). Line a baking sheet with foil and place a wire rack on top.
4. Remove chicken from marinade and arrange on wire rack, reserving marinade.
5. Bake for 35-40 minutes, flipping halfway and basting with reserved marinade, or grill for 25-30 minutes, turning and basting regularly.
6. Optional: Broil or sear for 2-3 minutes to caramelize.
7. Garnish with toasted sesame seeds and sliced green onions before serving.
