You will experience the bright, citrusy notes of fresh lemon perfectly balancing the rich, savory depth of high-quality lamb. The aromatic garlic infuses every bite with a warm pungency while providing powerful antioxidant support for your immune system. This recipe creates a tender, juicy texture that satisfies the palate and nourishes the body simultaneously.

Ingredients

Scale

1.5 lbs Lamb Loin or Rib Chops
46 cloves Fresh Garlic (minced)
1 large Fresh Lemon Juice & Zest
3 tablespoons Extra Virgin Olive Oil
2 tablespoons Fresh Rosemary (chopped)
1 teaspoon Dried Oregano
1 teaspoon Sea Salt
1/2 teaspoon Cracked Black Pepper

Instructions

  1. Prepare the Marinade: In a small glass bowl, whisk together the extra virgin olive oil, minced garlic, lemon zest, lemon juice, chopped rosemary, oregano, sea salt, and black pepper
  2. Marinate the Lamb: Place the lamb chops in a shallow ceramic dish or a reusable silicone bag. Pour the marinade over the meat, ensuring each chop is thoroughly coated. Allow marinating at room temperature for 20-30 minutes
  3. Preheat the Skillet: Place a large cast-iron skillet or heavy-bottomed pan over medium-high heat
  4. Sear the Chops: Carefully place the lamb chops into the hot skillet. Sear the first side for 3 to 4 minutes without moving them
  5. Flip and Finish: Turn the chops over and cook for an additional 3 to 5 minutes until desired doneness
  6. Rest the Meat: Transfer the cooked lamb chops to a warm plate and let them rest for at least 5 to 7 minutes
  7. Garnish and Serve: Finish the dish with an extra sprinkle of fresh herbs and a final squeeze of lemon juice

Notes

Ensure lamb chops are at least one inch thick to prevent drying.

Using a meat thermometer can help achieve the desired doneness.
