Ingredients
4 large Chicken Breasts
2 cups Fresh Spinach
4 ounces Cream Cheese
1/4 cup Parmesan Cheese
1/2 cup Mozzarella Cheese
3 cloves Garlic
2 tablespoons Olive Oil
1 teaspoon Paprika
Salt to taste
Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C)
- In a mixing bowl, combine softened cream cheese, chopped spinach, minced garlic, parmesan, and half of the mozzarella. Season with salt and pepper
- Slice a pocket into the thickest part of each chicken breast
- Stuff each chicken breast with the spinach mixture and secure with toothpicks
- Rub the outside of the chicken with olive oil, salt, pepper, and paprika
- Sear the chicken in an oven-safe skillet over medium-high heat for 3-4 minutes per side until golden brow
- Transfer the skillet to the oven and bake for 10-15 minutes until internal temperature reaches 165°F
- Let the chicken rest for 5 minutes before removing toothpicks and serving
Notes
For a lighter texture, substitute cream cheese with thick Greek yogurt or ricotta cheese.
If using frozen spinach, ensure it is completely thawed and excess water is removed before mixing.
