This Mexican Meatloaf combines the comforting flavors of traditional meatloaf with a zesty, cheesy twist. Packed with taco seasoning, melted cheese, and salsa, it’s perfect for busy weeknights and makes great leftovers.
Ingredients
1 lb ground beef
1 egg
1 cup breadcrumbs
1/4 cup onion, finely chopped
1/2 cup salsa
1 packet taco seasoning
1 cup shredded cheddar cheese
1/4 cup milk
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp chili powder
Instructions
1. 1. Preheat the oven to 375°F (190°C).
2. 2. Combine ground beef, egg, breadcrumbs, onion, salsa, taco seasoning, cheese, milk, garlic powder, cumin, and chili powder in a bowl.
3. 3. Shape the mixture into a loaf and place it in a greased loaf pan.
4. 4. Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
5. 5. Add extra salsa on top and bake for 5 more minutes to set the glaze.
6. 6. Let it rest for 10 minutes before slicing.
