1 New York Strip Roast (46 lbs)
2 tbsp Kosher Salt
1 tsp Freshly Cracked Black Pepper
4 Garlic Cloves, minced
2 tbsp Fresh Rosemary, chopped
2 tbsp Fresh Thyme, chopped
2 tbsp Extra Virgin Olive Oil


Instructions

  1. Temper the meat by removing it from the refrigerator at least two hours before cooking
  2. Prepare the herb rub by mixing minced garlic, chopped rosemary, thyme, kosher salt, black pepper, and olive oil in a bowl
  3. Season the roast by patting it dry and rubbing the herb mixture over all sides
  4. Preheat the oven to 450°F (230°C)
  5. Sear the roast fat side up for 15 minutes to brown the exterior
  6. Lower the oven temperature to 325°F (160°C) and roast until the internal temperature reaches 125°F for medium-rare
  7. Remove from oven and rest for 20-30 minutes before slicing

Notes

Never skip the resting period to keep the meat moist.

Use a meat thermometer to check the doneness.

Consider dry brining 24 hours in advance for enhanced flavor.
