Description

This Oat, Apple, and Carrot Cake is a wholesome treat packed with the goodness of oats, apples, and carrots. Perfect for breakfast, snacks, or dessert, it’s a comforting and healthy choice for the whole family.


Ingredients

1 ½ cups rolled oats

1 cup whole wheat flour

1 tsp baking powder

1 tsp cinnamon

½ tsp nutmeg

½ tsp baking soda

¼ tsp salt

2 large eggs

½ cup honey or maple syrup

½ cup vegetable oil (or melted coconut oil)

2 medium apples, peeled and grated

1 large carrot, grated

1 tsp vanilla extract

½ cup chopped walnuts or raisins (optional)


Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

2. In a large mixing bowl, combine the oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. In another bowl, whisk together the eggs, honey (or maple syrup), vegetable oil (or melted coconut oil), and vanilla extract.

4. Stir the grated apples and carrots into the wet mixture.

5. Fold the wet ingredients into the dry ingredients, stirring until just combined.

6. Pour the batter into the prepared cake pan and bake for 30-35 minutes, until a toothpick comes out clean.

7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a lighter version, replace the vegetable oil with applesauce or Greek yogurt.

For a nut-free version, leave out the walnuts or raisins.

This cake can be made ahead of time and stored in an airtight container for up to 3 days.
