Description

Experience the ultimate fusion of comfort and nutrition with this vibrant One Pot Marry Me Ground Beef Pasta. This dish features a luscious, sun-dried tomato cream sauce that coats every strand of pasta perfectly. By utilizing a single pot, we preserve all the natural juices and minerals often lost in traditional boiling methods.

Ingredients

Scale

1 lb Grass-fed Ground Beef
12 oz Whole Grain or Chickpea Pasta
1/2 cup Sun-dried Tomatoes (in oil)
3 cups Organic Bone Broth
4 large Fresh Garlic cloves
1/2 cup Full-fat Greek Yogurt or Coconut Cream
2 cups Fresh Baby Spinach
Italian Seasoning to taste
Red Pepper Flakes to taste

Instructions

  1. Brown the Beef: Place your large pot over medium-high heat. Add the grass-fed ground beef and cook until browned, breaking it into small crumbles
  2. Sauté the Aromatics: Add the minced garlic, shallots, and chopped sun-dried tomatoes to the pot with the beef. Sauté for 2 to 3 minutes
  3. Deglaze and Season: Pour in a splash of bone broth to deglaze the bottom of the pot, scraping up flavorful bits. Stir in Italian seasoning, red pepper flakes, salt, and pepper
  4. Simmer the Pasta: Add remaining bone broth and pasta to the pot, bring to a gentle boil, then simmer covered according to the pasta package directions
  5. Incorporate the Creaminess: Stir in Greek yogurt or coconut cream and mix until the sauce becomes smooth
  6. Wilt the Greens: Fold in fresh baby spinach until wilted, about 60 seconds
  7. Final Garnish: Taste and adjust seasoning. Serve immediately, garnished with fresh basil or lemon juice

Notes

Store leftovers in an airtight container in the refrigerator for up to four days.

Reheat over low heat on the stovetop, adding a tablespoon of broth or water if needed.
