3 Tablespoons Extra Virgin Olive Oil

Sea Salt & Black Pepper to Taste
1 Teaspoon Lemon Zest
Instructions
- In a small glass bowl, whisk together the extra virgin olive oil, minced garlic, chopped rosemary, smoked paprika, cumin, and lemon zest
- Pat the lamb chops dry with a paper towel and rub the spice paste generously over both sides of the meat
- Allow the lamb to marinate at room temperature for at least twenty minutes
- Heat a heavy cast-iron skillet over medium-high heat until shimmering hot
- Sear the lamb chops in the hot skillet for about 3 to 4 minutes per side
- Ensure the internal temperature reaches 135°F for medium-rare doneness
- Transfer the chops to a warm plate and let them rest for five minutes
