3 Tablespoons Extra Virgin Olive Oil
2 Sprigs Fresh Rosemary
4 Large Garlic Cloves
1 Teaspoon Smoked Paprika
1/2 Teaspoon Ground Cumi
Sea Salt & Black Pepper to Taste
1 Teaspoon Lemon Zest


Instructions

  1. In a small glass bowl, whisk together the extra virgin olive oil, minced garlic, chopped rosemary, smoked paprika, cumin, and lemon zest
  2. Pat the lamb chops dry with a paper towel and rub the spice paste generously over both sides of the meat
  3. Allow the lamb to marinate at room temperature for at least twenty minutes
  4. Heat a heavy cast-iron skillet over medium-high heat until shimmering hot
  5. Sear the lamb chops in the hot skillet for about 3 to 4 minutes per side
  6. Ensure the internal temperature reaches 135°F for medium-rare doneness
  7. Transfer the chops to a warm plate and let them rest for five minutes

Notes

Bring the meat to room temperature before cooking for better searing.

Do not crowd the pan to maintain high heat.

A cast-iron skillet is recommended for even heat retention.
