Description

This creamy Ranch Potato Salad brings a refreshing twist to a classic comfort food that is adored by kids and perfect for any occasion.


Ingredients

3 lbs Red or Yukon Gold Potatoes
1 cup Greek Yogurt (Plain)
1/2 cup Mayonnaise
2 tbsp Dry Ranch Seasoning Mix
3 stalks Celery
4 stalks Green Onions
2 tbsp Fresh Dill
1/2 tsp Garlic Powder
Salt and Black Pepper to taste


Instructions

  1. Wash the potatoes thoroughly and cut them into 1-inch cubes
  2. Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce heat and simmer for 10 to 12 minutes until fork-tender
  3. Drain the potatoes and let them cool completely
  4. In a small bowl, whisk together Greek yogurt, mayonnaise, ranch seasoning, garlic powder, and a splash of pickle juice until smooth
  5. In a large bowl, combine cooled potatoes, diced celery, and sliced green onions. Pour the ranch mixture over the vegetables
  6. Gently fold the dressing into the potatoes, being careful not to mash them
  7. Cover and refrigerate for at least one hour to meld flavors. Before serving, garnish with fresh dill and black pepper

Notes

For a vegan version, use plant-based yogurt and mayonnaise.

You can add other vegetables like steamed broccoli or diced cucumbers for more fiber.
