2 cups Whole Milk
1 cup Vegetable Broth
1 tbsp Fresh Thyme
Salt & Black Pepper to taste
1/2 cup Sharp Cheddar (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish
  2. Slice the Yukon Gold potatoes into uniform rounds using a mandoline slicer
  3. In a medium saucepan, melt the unsalted butter over medium heat and sauté the minced garlic until fragrant
  4. Whisk in the all-purpose flour to create a paste, then gradually add the whole milk and vegetable broth while whisking continuously
  5. Add salt, pepper, and fresh thyme to the sauce, whisking for 3-5 minutes until slightly thickened
  6. Layer half of the sliced potatoes in the baking dish, pour half the sauce over, and repeat with the remaining potatoes and sauce
  7. Cover with foil and bake for 30 minutes. Remove foil, add cheese if desired, and bake for an additional 15-20 minutes until golden and tender
  8. Let sit for 5-10 minutes before serving to allow the sauce to set

Notes

Do not soak the sliced potatoes in water to retain starch for thickening the sauce.
