Ingredients
3 lbs Yukon Gold Potatoes
3 tbsp Unsalted Butter
4 Garlic Cloves minced
3 tbsp All-Purpose Flour
2 cups Whole Milk
1 cup Vegetable Broth
1 tbsp Fresh Thyme
Salt & Black Pepper to taste
1/2 cup Sharp Cheddar (optional)
Instructions
- Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish
- Slice the Yukon Gold potatoes into uniform rounds using a mandoline slicer
- In a medium saucepan, melt the unsalted butter over medium heat and sauté the minced garlic until fragrant
- Whisk in the all-purpose flour to create a paste, then gradually add the whole milk and vegetable broth while whisking continuously
- Add salt, pepper, and fresh thyme to the sauce, whisking for 3-5 minutes until slightly thickened
- Layer half of the sliced potatoes in the baking dish, pour half the sauce over, and repeat with the remaining potatoes and sauce
- Cover with foil and bake for 30 minutes. Remove foil, add cheese if desired, and bake for an additional 15-20 minutes until golden and tender
- Let sit for 5-10 minutes before serving to allow the sauce to set
Notes
Do not soak the sliced potatoes in water to retain starch for thickening the sauce.
Consistency is critical; ensure potato slices are uniform for even cooking.
