Description

This Slow Cooker French Toast Casserole offers a blissful start to your morning with complex carbohydrates and high-quality proteins, melting together in a nutrient-dense and fiber-rich comfort food that satisfies the whole family.


Ingredients

1 large loaf Sourdough or Sprouted Grain Bread
8 large Pasture-Raised Eggs
2 cups Unsweetened Almond or Oat Milk
1/3 cup Pure Maple Syrup
1 tablespoon Ceylon Cinnamo
1 tablespoon Pure Vanilla Extract
1/4 teaspoon Sea Salt
1 tablespoon Unsalted Grass-Fed Butter (for greasing)


Instructions

  1. Cut the loaf of bread into uniform one-inch cubes. Optional: lightly toast in a 350-degree oven for 10 minutes
  2. Generously grease the interior of your slow cooker with grass-fed butter or coconut oil
  3. In a large mixing bowl, whisk together the eggs, plant-based milk, maple syrup, vanilla extract, cinnamon, and sea salt
  4. Place the bread cubes into the slow cooker. Pour the egg mixture over the bread and gently press it dow
  5. Optional: Let the mixture sit for about 20 minutes
  6. Cover the slow cooker and cook on Low for 4 to 5 hours or on High for 2 to 2.5 hours
  7. Turn off the heat and let the casserole rest for 10 minutes with the lid off before serving

Notes

For gluten-free, substitute the bread for your favorite sturdy gluten-free bread.

For a vegan version, replace the eggs with a plant-based egg substitute.
