Instructions
- Whisk your active starter and warm water in a large glass bowl until the starter dissolves
- Add the bread flour and sea salt to the mixture and stir until a shaggy dough forms
- Cover the bowl and let the dough rest for 30 to 60 minutes
- Perform the first set of stretch and folds, then repeat every 30 minutes for a total of four sets
- Let the dough sit undisturbed for 4 to 6 hours until it increases in volume by about 50%
- Shape the dough into a tight round boule and place it in a proofing basket
- Refrigerate overnight for 12 to 15 hours
- Preheat your oven to 450°F with a Dutch oven inside for at least 45 minutes
- Transfer the dough onto parchment paper, score the top, and place it in the hot Dutch ove
- Bake for 20 minutes with the lid on, then remove the lid and bake for another 20 to 25 minutes
- Cool completely for at least two hours before slicing
