Description
The Strawberry Crackle Salad is a delightful fusion of creamy and crunchy textures, featuring fresh strawberries and a brittle topping, perfect for picnics or elegant gatherings.
Ingredients
2 lbs Fresh Strawberries, hulled and sliced thinly
8 oz Cream Cheese, softened to room temperature
2 cups Pretzel Twists, crushed into coarse pieces
1/2 cup Organic Granulated Sugar, for the topping
2 tbsp Organic Granulated Sugar, for the berries
1 cup Heavy Whipping Cream, chilled for maximum volume
1 tsp Pure Vanilla Bean Paste
3/4 cup Salted Butter, melted
Instructions
- Preheat oven to 350°F (175°C). Spread crushed pretzels on a baking sheet, toss with melted butter and half of the sugar. Bake for 10 minutes until golden. Cool completely
- Slice strawberries and toss with 2 tablespoons of sugar. Let them macerate for 15 minutes
- In a large chilled bowl, whip heavy cream until stiff peaks form. In another bowl, beat cream cheese with remaining sugar and vanilla until light
- Gently fold whipped cream into cream cheese mixture
- Assemble in a large bowl: start with cream mixture, then macerated strawberries
- Just before serving, sprinkle the pretzel crackle on top. Garnish with fresh mint or whole berries
Notes
Store cream and strawberry base in the fridge for up to 2 days. Keep pretzel topping in a dry container at room temperature.
