Description

Ingredients

100g Active Sourdough Starter
500g Bread Flour
350g Warm Water
10g Sea Salt
1 cup Freeze-Dried Strawberries
150g High-Quality White Chocolate Chips


Instructions

  1. In a large bowl, whisk your active starter into the warm water until it is mostly dissolved. Add the flour and salt. Mix until a shaggy dough forms and no dry flour remains. Let this rest for 30 minutes
  2. Every 30 minutes for the next two hours, grab the edge of the dough, pull it up, and fold it over itself. Rotate the bowl and repeat four times
  3. On the final fold, gently stretch the dough out into a large rectangle on a clean surface. Sprinkle your freeze-dried strawberries and white chocolate chips evenly over the surface. Fold the dough back up into a ball
  4. Place the dough back in the bowl, cover it, and let it rise in a warm spot until it has grown by about 50%. This usually takes 4 to 6 hours depending on your kitchen temperature
  5. Gently shape the dough into a round boule or an oval batard. Place it into a floured proofing basket. Put it in the fridge overnight
  6. Preheat your oven and Dutch oven to 450°F. Turn the cold dough out onto parchment paper, score the top with a sharp blade, and drop it into the pot. Bake covered for 20 minutes, then uncovered for another 20-25 minutes until golden brow

Notes

For best results, keep the white chocolate tucked inside the dough during shaping to prevent burning.

Using digital scales for precise measurements is highly recommended.
