Ingredients
100g Active Sourdough Starter
500g Bread Flour
350g Warm Water
10g Sea Salt
1 cup Freeze-Dried Strawberries
150g High-Quality White Chocolate Chips
Instructions
- In a large bowl, whisk your active starter into the warm water until it is mostly dissolved. Add the flour and salt. Mix until a shaggy dough forms and no dry flour remains. Let this rest for 30 minutes
- Every 30 minutes for the next two hours, grab the edge of the dough, pull it up, and fold it over itself. Rotate the bowl and repeat four times
- On the final fold, gently stretch the dough out into a large rectangle on a clean surface. Sprinkle your freeze-dried strawberries and white chocolate chips evenly over the surface. Fold the dough back up into a ball
- Place the dough back in the bowl, cover it, and let it rise in a warm spot until it has grown by about 50%. This usually takes 4 to 6 hours depending on your kitchen temperature
- Gently shape the dough into a round boule or an oval batard. Place it into a floured proofing basket. Put it in the fridge overnight
- Preheat your oven and Dutch oven to 450°F. Turn the cold dough out onto parchment paper, score the top with a sharp blade, and drop it into the pot. Bake covered for 20 minutes, then uncovered for another 20-25 minutes until golden brow

For best results, keep the white chocolate tucked inside the dough during shaping to prevent burning.
